Özet
Goldenberry (Physalis peruviana L.) is a popular fruit belonging to the Solanaceae family. It has been widely used in folk medicine, cosmetics, and the food industry due to its nutritive values, health benefits, and organoleptic properties (flavor, odor, and color). It could be consumed as fresh fruit, and also used in the food industry for bakery products, snacks, sauces, syrups, beverages, yogurts, jam, and marmalades. Its by-products (calyces, leaves, seeds, and pomace) were considered as waste earlier but recently researchers are interested in their rich bioactive content and beneficial nutritive values. Goldenberry by-products are representing good sources of minerals (potassium, phosphorous, magnesium, calcium, sodium, iron, zinc, copper), vitamins (vitamin C, vitamin A, β-carotene, thiamin, riboflavin, niacin), amino acids (glutamic acid, arginine, cysteine/methionine, histidine, tyrosine/phenylalanine, threonine, lysine, isoleucine, and leucine), withanolides (physalin B and F), polyphenols (gallic acid, catechol, p-hydroxybenzoic acid, caffeine, vanillic acid, syringic acid, vanillin, benzoic acid, o-coumaric acid, salicylic acid, cinnamic acid, naringenin, kaempferol, apigenin, and pyrogallol), and essential fatty acids (linoleic, oleic, palmitic, stearic, arachidic, palmitoleic, α-linolenic, behenic, and lignoceric acids). These compounds of goldenberry and its by-products provide some health-promoting activities such as antitumor, antioxidant, antidiabetic, antiseptic, antifungal, antibacterial, anticarcinogenic, antimalarial, and antiinflammatory activities. In this chapter, the bioactive components and health-promoting activities of the calyx, leaf, seeds, and pomace of goldenberry and their application products will be examined.
